Rhubarb Muffins

Ingredients: 

1-1/4 cups brown sugar
1/2 cup vegetable oil
1 egg
2 tsp vanilla
1 cup buttermilk (or 1 cup milk + 1 tbsp vinegar)
1-1/2 cups rhubarb (or raspberries)
1/2 cup chopped walnuts
2-1/2 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon

Directions: 

Preheat oven to 400°F.
Whisk together first 5 ingredients. Add the nuts and rhubarb.
Stir remaining dry ingredients together and add to the wet ingredients.
Spoon into greased muffin tins.
Bake for 20-25 minutes.
