Herb and Goat Cheese Pizza

Ingredients: 

1/4 cup (50 mL) chopped Italian parsley
1/4 cup (50 mL) chervil sprigs
1/4 cup (50 mL) chopped garlic chives
1/4 cup (50 mL) chopped fresh mint
1 tsp (5 mL) crushed garlic
1/2 cup (125 mL) goat cheese
2 tbsp (25 mL) whipping cream
1 thin pre-baked pizza crust
2 tbsp (25 mL) olive oil
1 cup (250 mL) grated Parmesan

Directions: 

1. Preheat oven to 450°F (230°C).
2. In a food processor or by hand, combine herbs, garlic, goat cheese and cream. Once it has been processed, the mixture should be spreadable. If it is too thick, thin down with more cream.
3. Place pizza crust on a baking sheet or on a pizza stone. Brush base with olive oil. Spread herb mixture evenly over pizza crust. Top with Parmesan cheese. Drizzle with any remaining olive oil. Bake pizza for 10 to 15 minutes or until the mixture is hot and the top is browned slightly.
